Loaded Potato Salad
This weekend, The Mister and I have to do some trenching and installation of a drainage system in our back yard. The need for this is to keep water from entering the dogs’ house. This week’s big storm and next week’s impending multiple days of rain is making this a necessity for this weekend. Since we’re both apparently old and easily breakable (*sigh*), I’ve sweetly asked my wonderful son to come over and help. I’ll let him use the trencher, after all . . . so who could say no? lol. Anyway, as payment for helping, I’ll be fixing one of his favorite meals. Shredded pork and loaded potato salad. Therefore, I decided that YOU ALL should also know my recipe for loaded potato salad. I didn’t come up with it, but I’ve used it for years, and I have no idea where I originally found it. I also use my homemade ranch dressing in it. I don’t think I’ve shared that one yet, but I’m making a note to share it in the future. But any ranch should work in this recipe. It just might not be as good as mine. ?
Ingredients

2 lb red potatoes, quartered

½ lb bacon strips, chopped (real bacon bits will work, too, but cooking bacon is super yum for this)

½ c mayonnaise (I only use Duke’s)

¼ c creamy Caesar salad dressing (my fave is Ken’s Steak House brand)

¼ c ranch salad dressing

3 T sour cream

1 T Dijon mustard

3 green onions, chopped (I actually use Tastefully Simple’s Onion Onion mix. I just shake some in until I feel like it’s enough.)

½ c shredded cheddar cheese (it’s best with the thicker cut shredded cheese, not the fine cut)

Coarsely ground pepper, optional
Instructions
Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook 15-20 minutes or until tender.
Meanwhile, cook bacon in a large skillet over medium heat, until crisp. Remove to paper towels; drain, reserving 3 T drippings.
Drain potatoes and place in a large bowl. Add bacon and reserved drippings; toss to coat. Refrigerate until chilled.
Whisk the mayonnaise, dressings, sour cream and mustard in a small bowl. Pour over potato mixture; toss to coat. Stir in onions and cheese. Sprinkle with pepper if desired.
