Potatoes Gratin
These are my favorite potatoes. They take a few minutes to make but are so so so yummy!!! Enjoy!
Ingredients
- 2 lbs baking potatoes, peeled and sliced paper-thin
- 2 c heavy cream
- 2 cloves garlic split
- 1 bay leaf
- 3T chopped fresh chives, plus more for garnish (You can also use dried but use only 1T)
- 1 c grated Parmigiano-Reggiano
- Salt and pepper
Instructions
Preheat oven to 375 degrees F.
In a pan, combine all ingredients except for the potatoes and bring to a low simmer. Allow to heat thoroughly, ensuring cheese melts.
Remove the bay leaf and pour mixture over potatoes, tossing to coat. Dump into a casserole dish, flattening the potatoes out with a spatula. (I usually spray the casserole dish, but I’m not sure if you need to.)
Bake for 40 minutes, until the potatoes are tender and the gratin is bubbly. Let stand for 10 minutes before serving. Garnish with fresh chives.
Hints:
- For best results, use fresh cheese and grate yourself. Packaged parmesan doesn’t melt the same.
- For leftovers, the potatoes reheat great in microwave.
